Canadian Breakfast: A Toast from Canada

This tea blend was specially created in Canada by the Metropolitan Tea Company taking into consideration the nuances of the various waters across Canada. To be considered "THE TOAST OF CANADA" from a tea perspective, the tea had to be able to shine in any water. More than 35 various teas were tasted using the water sent to the company from various parts of the country. The tasting session extended more then 2 days until the right blend was achieved which combined the best teas in a synergistic relationship. The Assam component (2 flush, June) gives a thick malty and full bodied character. The Kenyan component gives a a floral-like cup and coppery infusion whereas the South Indian component gives a superb fruity and sprightly flavor with a lovely finish. From Sri Lank the tea is added for an airy piquant flavor that opens up the blend. Lastly Keemun gives it a burgundy depth and light oaky notes. This tea may cloud when iced, but that is ok. It reflects the high polyphonol levels.
